What about mead?
Charlie Papazian, President of the association of Brewers recomends this
simple traditional honey mead to begin with.

Ingreidance:
15lbs of light honey
1 Tbsp of gypsum
1/2oz of dried champagne yeast
1/4 tsp Irish mosss powder

1.	Throw everthing but the yeast into 1 1/2 gallons of water and boil
	for 15 minutes.(wort)

2.	Mix with 3 1/2 gallons of cold water in a resonable container

3.	Soak yeast in 105° water for 10 minutes, then add to the wort
	when the mixture drops to below 80°

4.	Let the mead ferment in a cool, dark place, for 3 weeks to servral
	months. remember longer fermentation leads to a highter alcohol
	content.

5.	After the mead clears move the liquid to another resealable
	container/bottle.

GEEKGRLS NOTES:

1.	ferment the mead in a dark container so no light penetrates at all,
	this reduces some of the bitterness.

2.	leave bottled for a minimum of three weeks before drinking.
